The types of oranges I like to use are navel oranges because they're nice and big and make lots of candied peels. Before you cut into them, make sure you really rinse it out because usually you'll find some waxy residue. I have a pot of boiling water over here because first we're gonna sort of blanch the peels to get rid of a little bitterness
3 organic navel oranges. 2 cups granulated sugar. Trim ends from oranges and then score the rest of the peel in quarters from top to bottom, stopping at the flesh of the orange. Pull the peels from the flesh (save the oranges in an airtight container in the fridge for eating later). Lay the wide pieces on a cutting board, orange side-down, and very carefully use a sharp paring knife to scrape away as much of the loose/stringy white pith as possible. You won’t get it all, that’s ok. + Slice the peels into -inch wide strips.
Remove orange peel in quarters; place in saucepan; cover with cold water. Bring to boil; cook until tender, pouring off water and adding fresh cold water several times. Drain peel; cut in thin strips with scissors. Combine 1 cup sugar, salt, and water in saucepan; cook until mixture threads (242° on candy thermometer). Roll strips in remaining 1/2 cup sugar until coated.
